A good simply roasted chicken is often all we need when we think of comfort food. It is easy, and you don’t need much out of your pantry. All you will need is a 3-4lb chicken, salt, herbs, white wine, shallots, and butter.

To Roast:
Pre-heat oven to 425*
While the oven is preheating, rinse the chicken on cold water and pat dry.
Fill the chicken cavity with any herbs you want, I like to use rosemary and thyme, onion, and a few lemon wedges
Liberally salt the entire chicken, and I mean very liberally, on all sides. After salting, truss the chicken using kitchen twine to help the thighs cook evenly with the rest of the chicken
Place in an oven safe pan (preferably cast iron) and roast for 1:15.
After roasting, remove and set chicken aside covered for 15 minutes.
To make a pan gravy, remove all but 3-4 tablespoons of fat, and over medium heat reduce one cup of white wine by half, with shallots and rosemary. Use a wooden spoon to integrate all of the good bits of chicken left on the bottom of the pan. Once reduced, turn heat to low and add a generous amount of butter to thicken the sauce. Salt and Pepper to taste.
